Nothin’ but Condiments
Okay, this picture is embarrassing. Last week I actually let our fridge get to this point. Absolutely nothing but condiments and a few odds and ends. Funny thing was, I kept putting off my grocery shopping and pulling meals out of nowhere day after day! I utilized my freezer some and we ate egg salad sandwiches and carrot sticks one evening for dinner. (exciting, I know)
Another good thing that came of it: I discovered German Pancakes. Hello. Easiest and quickest breakfast ever. Rebekah had a giveaway and a plea for breakfast ideas a couple weeks ago and lo and behold! As I zipped through the comments, I saw that people kept mentioning German Pancakes or “Dutch Baby.”
Now. Who of you already knew of this and with held the information? Shame on you. I followed the directions of the very first commenter who mentioned it and our breakfast was delish and so easy.
Here’s how she said to do it:
The original recipe (which I usually double for my family of 7 and put it in 2 9×13s instead) is melt 2 tbl. butter in a glass pie dish (in the oven while you are preheating it to 425). In blender, mix 3 eggs, 1 c. milk, 1/2 tsp. of salt, 1/2 tsp. vanilla, and 1 scant c. of flour. Pour into pan and bake for 20 minutes. Serve with maple syrup, powdered sugar, fresh fruit, or all three!
If you try this, let me know how you liked it. It just doesn’t get a whole lot easier…
Growing up The Boekell family would eat this every week and to this day it is something mum Boekell will often get asked to make… : ) Though we called it “No flip” Pancake … : ) My family likes it also, but I started using whole wheat & soy protein instead of flour… Thanks for sharing! My Fridge has looked like that lot this summer.
At least your fridge is waaay cleaner than mine is!
Gina, only you {and perhaps Rebecca P. Smith} could make an empty fridge shot look glamorous. You ladies and your mad photo skilz just amaze me=)
We had this tonight for supper! Of course, I had to double it to feed us! We all loved it and I’m thinking it will be a good way to use up all the eggs we will have in a couple months. Thanks for sharing!
We LOVE these German pancakes!! I made them for the second time this morning and used real butter to “butter” the pan…fantastic! Also, I think I didn’t let the pancakes get as brown this time and I think they were better a little more golden. The first time we tried these I fried some of Shelly’s apples(http://modmamas.blogspot.com/2008/07/fried-apples-and-biscuits.html)–perfection!
