Paella!
This was a new recipe and genreĀ for us, but one that we all loved. It all started with an email to a friend; a desperate, “Help me, I’m in a rut” kind of email. I was making meal plans and trying to come up with a shopping list and menus using things I already had on hand. One of those things was smoked sausage. And as much as we love potatoes, carrots and sausage from the skillet, I didn’t think I could do it one more time. So this Chicken and Sausage Paella at Shelly’s suggestion was just perfect.( And it’s a crock pot recipe, to beat it all. Even better, I say!)
I didn’t have peas, so I threw in some chopped asparagus instead. Also, at Shelly’s suggestion, I used boneless chicken breasts, browned, then shredded after being in the slow cooker all day. Nice and tender. (One more really nice addition, was the saffron rice mix, instead of just plain rice. So good. My kids said they really liked “this yellow stuff.”)
So, now we have a nice new “keeper” to add to our repertoire. That’s never a bad thing.
