Birthday Improv

Hmmm. What to do? Snowstorm and other minor inconveniences during the week ended up thwarting some of my plans for a special little one year old this weekend. Deciding to forgo a trip to the grocery store, I did a quick search for birthday cake recipes online and found this. Next, I went scrounging around the cupboards for cake ingredients and found out that a few were missing. Dashed out an email plea for advice from a friend and made it work. Made my own buttermilk,  and found a fix for having no cake flour.  The lesson I learned?  There’s always a solution. On to the icing. Since I used up the last of the milk for the cake, I decided on this recipe. Taste testers were on standby and readily approved.

The wooden rocking horse I was refurbishing is on the front porch covered in snow, only half finished. Little man will have to wait for that surprise. A couple of little gifts from loved ones and siblings sufficed. Check this out, from a great gran. He has not put it down.

We also participated in a Smith Family Olympics in the afternoon and while he was mostly a spectator, fun was still had by all. Fun is a must on birthdays.  And we’re all more ready for spring than ever before.
